My first venture into rawness was Chocolate Covered Katie’s Fudge Babies which you can read about here. They were so yummy I decided to try something else in the Raw World – enter Averie of Love Veggies and Yoga – and her Thai Peanut Zucchini Noodles! It was destiny because she and I have the same spiralizer… oh, I do so love gadgets…. uhhhhh and food.. I do love food.
Cukes, Orange and Yellow Bells
I followed her recipe almost exactly…
- 1 zucchini
- 1 red bell pepper (I used a mini size)
- 1 yellow bell pepper (I used a mini size)
- 1/2 cuke (again, I used a mini)
The spiralizer made quick work of turning the zucchini into noodles.
The Dressing was what drew me to this:
- 2 tbsp peanut butter
- 1 tbsp agave syrup
- 1 tbsp maple syrup (only had sugar free)
- 1 tsp sesame oil
- 1/2 tsp ground ginger (didn’t have any, darn it!)
- 1-2 tbsp raw apple cider vinegar (I used 1 tbsp of uhmm regular apple cider vinegar)
I blended using my submersion blender – there just wasn’t enough there for my vita mix to handle (gots to get me a smaller wet container … maybe Christmas??)
Combined all this loveliness and it looked scrumptious!
Thai Peanut Zucchini Noodles
Averie mentioned she didn’t like onions and garlic. Me? I love me.. the more the merrier. This was really good as is but next time I make it (and there will be a next time) I’ll add some chopped onion or maybe a chopped shallot instead.
I was curious about the nutrition of this little dandy… The serving size is HUGE and if you eat the entire thing it’s a bit more than 400 calories, 21.5 grams fat, 52.5 carbs, 9.2 fiber and 13.2 protein. Not bad? It gets better… it’s got 1600mg of Potassium.. that is 2/3 of what you need for the day.. and wait for it.. waaaait for it… 1100mg of Vitamin C!! Wow. (Estimates courtesy of Sparkpeople.com)

I’m a regular HEAB reader… and she lead me to Katie… Katie is doing what one person can to raise money for her favorite charities The Enough Project – she’s having a Page View Charity Drive!! Brilliant idea.. simply brilliant. This week HEAB is having a contest called POM Covered Kindness in support of Katie. The challenge was to incorporate pomegranate into one of Katie’s most delicious recipes. Katie has been positively raving about these Fudge Babies so I decided to enter with that recipe.
I followed Katie’s recipe fairly close.. I used:
130 grams walnuts, only 130 grams of pitless dates (Katie suggest 230g) , 4 tbsp organic Cocoa powder, 1 tsp vanilla – I added the arils from one pomegranate and 2 tbsp of organic unsweetened coconut… YUMMO
I have never had pomegranate juice or arils… and had to google how to get the little bursts of goodness out of their shell. It wasn’t hard though. I do like the taste although some of the Arils have a hard “seedlike” thingee in them that a big weird… not all of them, just a few.
And here (drum roll) is my first “raw” food.. the scrumptious.. Chocolate Covered Katie Fudge Babies ala Coconut and Pomegranate Arils!

I’m not sure how I found Heather of “Heather Eats Almond Butter“… but I did… the same day I found her I discovered I had 999 days until I turn 50 (now, 944 days). Kismet? I loooooove almond butter… love love… And, she was living in a YURT! A yurt?? I love yurts and no one I talk to ever knows what I’m talking about. I dream of living in the mountains in a yurt… ahhhhh… anyhoo.. Through her blog I found all sorts of twenty somethings documenting their meals everyday… and some super scrumptious healthy food ideas along the way! Some I would have never thought of.. some I still can barely think of! LOL I’m not sure if this is only popular with 20 somethings or if it’s a fluke I can’t find any 40 somethings blogging about what they eat.. either way.. (shrug) I’m here now… and I love reading the 20 something’s blogs..
One I found is Holly aka “The Healthy Everythingtarian” via HEAB (Heather Eats Almond Butter)… another twenty something blogging about her journey of healthy eating… well she had a great (odd) idea she got from another blogger for this scrumptious concoction… I messed with it a bit but not much..
Hidden Valley Protein Salad…
- 1/2 cup cottage cheese
- 1/3 cup garbanzo beans
- 1/4 cup chopped red onion
- 1/2 cup tomato
- 1 tbsp sunflower seeds
- 1 tsp (or to taste) of dry Hidden Valley Ranch Dressing (the secret ingredient!)
- and about 2 oz of either salmon or chicken…
Drum roll… a whopping 34 grams of protein and a bit over 300 calories.
It is sooooo good! And was accompanied by no “energy bumps”
